I have a very hungry 4 year old who asks me 457 times a day “what can I eat now, Mama?”. Most of the time I wish I had my act together and could say “go get a couple energy balls”, but I usually end up saying “hold on” or “I’ll get you something in a minute!”. But she loves these little balls, we all do, and it’s so nice to be able to grab something with a little protein, a little carb, a little fat, a little sweet… They stick to your ribs and tide you over. And she can get them herself!

But, I mean look at that goodness. Who wouldn’t want to stuff these in their pockets? Or mouth.
The best part about these is that they are so easy it’s ridiculous. You just dump stuff in a bowl, mix it up and press into balls. Ta-da.
~Energy Balls~
Makes about 1 Dozen
1 cup quick oats
1/2 cup ground flax
2/3 cup unsweetened coconut flakes
1/2 cup natural peanut butter
1/2 cup semi-sweet chocolate chips
1/3 cup raw honey
1 Tablespoon chia seeds
1 teaspoon vanilla extract
Mix all ingredients together, using your hands works the best. Cover and chill mixture in refrigerator for at least 30 min. Roll into desired size balls and store in sealed container in the fridge.
Optional ~ I never use that much honey, I just add until the mixture sticks together enough to roll balls. So add as much as you like. Too little will create a crumbly texture though. Also, amount of chocolate chips is totally up to you, Leave them out even, if you like. Nuts could be substituted for a low sugar option.
Energy Balls
Makes 12 balls
Ingredients
- 1 cup quick oats
- 2/3 cup unsweetened coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup raw honey
- 1 Tbsp chia seeds
- 1 tsp vanilla extract
Instructions

Combine all ingredients in a mixing bowl and mix until incorporated.

Use hands to mold 12 portions into balls.

Store in airtight container in fridge.
