Using a Mandoline Slicer To Get The Perfect Cucumber Slice

My first tip for making any cucumber salad is to slice your cucumber into very thin slices. I like them to be this enough to see light through, and the easiest way to get that thin of a slice is to use a mandoline slicer. I just have a basic one, like the before linked and it works great! Also this one is really nice looking, as it keeps your fingers out of the equation.
**Word of caution: mandoline slicers are very helpful and I enjoy using mine often, BUT they can also be very dangerous if not used properly. Once, when I was a beginner to using it, I sliced off nearly the entire end of my pinky finger, tip of the nail and everything. Soooo, if you’ve not used one before, just read up a little on how to use it safely. Keeping the far out of reach of young children and always using the finger guard that should come with it.
What Type of Cucumbers to Use in This Simple Asian Cucumber Salad?
The best type of cucumber to use in any cucumber salad is a seedless, thin-skinned cucumber such as an English or Persian cuke. These cukes don’t need to be peeled, or de-seeded.
My personal favorite are the mini cucumbers that come in a bag of 5 or 6. With a mandoline slicer, they slice into the perfect coin sized bites, almost thin enough to see through.
Making the Dressing for the Simple Cucumber Salad
I like to put the ingredients for the simple cucumber salad dressing into a mason jar and shake it up to mix, before pouring it over the cucumbers.
The salad gets even better and more flavorful if it has some time to sit in the refrigerator and marinade in the dressing. An hour or two at least, but several hours or overnight is even better!
Ingredients for Simple Asian Cucumber Salad
1 lb. cucumbers (English or Persian, seedless cucumbers. I like mini cukes)
1/4 cup chopped green onions/scallions
1 ounce extra virgin olive oil
1 ounce rice vinegar
2 teaspoons + 1 Tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon onion powder
2 teaspoon Everything But the Bagel Seasoning or Everything But the Bagel Seasoning with Jalapeno. (Aldi has the jalapeno flavor one!)
Variations on the Simple Asian Cucumber Salad
- replace the green onions with thinly slices red or yellow onions
- thin sliced carrots or radish
- a dash or two of honey or maple syrup for extra sweetness
- mix in some fresh minced garlic and or ginger for a bold flavor
- some red pepper flakes could add a kick
- a drizzle of sesame oil to up the soy flavor
What Should I Serve the Simple Asian Cucumber Salad With?
I know that this salad has Asian inspired flavors and some of these suggestions are on a different culture spectrum, but sometimes it’s worth mixing things up! You might be surprised!
- grilled meat dishes such as a marinated and grilled chicken dish or grilled shrimp
- broiled salmon
- roasted veggies such as bell peppers, mushrooms, squash and carrots
- pita bread and hummus
- rice pilaf or chicken and rice dish
- stir fry
- egg rolls
- braised beef (this recipe looks really yummy and easy! I love Flo Lum’s Youtube channel!)
- chicken Lo Mein
- deviled eggs

Simple Asian Cucumber Salad
Simple and quick recipe to throw together, with crisp, crunchy cucumbers and a salty, umami flavor.
Ingredients
- 1 pound sliced cucumbers
- 1/4 cup green onions/scallions
- 1 ounce extra virgin olive oil
- 1 ounce rice vinegar
- 1 Tbsp+ 2 tsp soy sauce
- 1/2 tsp salt
- 1/2 tsp onion powder
- 2 tsp everything but the bagel seasoning or everything but the bagel with jalapeno
Instructions

Slice your cucumbers very thin into coins. Using a mandoline slicer is very helpful.

Add cucumbers to a large bowl.

Chop green onions into small round pieces and add to cucumbers.

Combine all other ingredients into a mason jar and shake well.

pour dressing over cucumbers and onions and mix well.

May serve immediately, but improves with some time to marinate in the refrigerator. 2 hours, up to a day deepens the flavor!
