Simple Asian Cucumber Salad

Simple and quick recipe to throw together, with crisp, crunchy cucumbers and a salty, umami flavor.

Ingredients

  • 1 pound sliced cucumbers
  • 1/4 cup green onions/scallions
  • 1 ounce extra virgin olive oil
  • 1 ounce rice vinegar
  • 1 Tbsp+ 2 tsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 2 tsp everything but the bagel seasoning or everything but the bagel with jalapeno

Instructions

  1. Slice your cucumbers very thin into coins. Using a mandoline slicer is very helpful.

  2. Add cucumbers to a large bowl.

  3. Chop green onions into small round pieces and add to cucumbers.

  4. Combine all other ingredients into a mason jar and shake well.

  5. pour dressing over cucumbers and onions and mix well.

  6. May serve immediately, but improves with some time to marinate in the refrigerator. 2 hours, up to a day deepens the flavor!
