Wholesome Pantry Pancake Mix

Whip up a batch of this simple pancake mix. Keep it in the pantry, ready for a quick and easy breakfast... Or any meal for that matter!

Ingredients

To Make Mix:

  • 8 cups flour Combine how you wish. I use 1/2 sprouted whole wheat and 1/2 unbleached all purpose.
  • 6 tbsp baking powder Watch out for the aluminum! Look for aluminum free.
  • 4 tsp baking soda
  • 2 tsp salt Again, use good quality. Pink, sea or Redman's Real. Every oppurtunity to uplift food to be better for us!
  • 4 tbsp + 4 tsp organic cane sugar or coconut sugar

To Make Pancakes

  • 1 cup pancake mix
  • 1 cup milk of your choice I use plain, unsweeted almond milk
  • 1 egg
  • 1 tbsp melted butter or coconut oil
  • dab butter or oil to fry

Instructions

  1. To Make Mix:

    You can dump all dry ingredients into a large airtight container and shake to mix. Then just keep in pantry to use as needed.

  2. To Make Pancakes:

    Mix together with a whisk until combined. Don't over mix.

    Fry pancake of your desired size on a cast iron skillet or electric griddle in butter or coconut oil on high until edge begins to crust and bubbles form in the middle. Flip pancake and finish cooking.

    Enjoy topped with globs of grass fed butter (Kerrygold), real maple syrup and a big, fat smile on your face! Happy pancake-ing friends!
